Classic Collins:
2oz Bombay Sapphire
Juice of half a lemon
½oz. elderflower cordial
One-third of a fresh peach or 2/3oz white peach puree
Crush the peach in a mixing glass, then add other ingredients and stir with ice. Strain into an ice-filled tall glass, top with soda and stir. Garnish with a peach wedge.
